There’s nothing better than a simple piece of salmon. This salmon is dressed with a flavorful and delicious pesto. While a traditional pesto uses pine nuts and basil, this pesto pairs dill and walnuts together. The pesto can be doubled or tripled and kept around as a condiment to use on meat and salads.

Ingredients

  • 6 ounce salmon, red (sockeye), raw, alaska native
  • 1 tablespoon butter
  • ¼ teaspoon salt
  • 1 tablespoon, chopped walnuts
  • 1 ½ tablespoon, chopped parsley
  • 2 tablespoon dill weed, fresh
  • ½ teaspoon lemon juice
  • 1 teaspoon extra virgin olive oil
  • ½ clove garlic
  • ⅛ teaspoon black pepper

Instructions

  1. Pat a portion of salmon dry with a paper towel and season the salmon with 1/8 tsp. salt and pepper.
  2. Heat a tablespoon of butter in a pan over medium-high heat. Once hot, press the salmon skin side down in the pan. Turn the heat to medium or medium-low and allow the salmon to cook skin side down for 5-7 minutes.
  3. Carefully flip the salmon over so the skin stays intact. Cook for an additional 2-3 minutes, then allow the salmon to rest while you prepare the pesto.
  4. Finely chop the the walnuts, parsley, dill, and garlic and place in a bowl. Add the lemon, olive oil, ⅛ tsp. salt and black pepper.
  5. Pour the pesto on top of the salmon and enjoy!
