These crispy chicken tenders are coated in a soy and lemon mayo then rolled in a sesame, chia and ground almond crumb before being baked until golden.

These make a great dinner or lunch served with cauliflower rice or stir fried vegetables.

Ingredients

  • 8 tender chicken tender, raw
  • 2 tablespoon, ground almonds, raw
  • 2 tablespoon, whole pieces chia seeds
  • 2 tablespoon, whole pieces sesame seeds
  • 2 tablespoon mayonnaise
  • 1 teaspoon sesame oil
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and lightly oil a shallow baking tray.
  2. Add the mayonnaise, sesame oil and lemon juice to a small bowl. Mix together well to combine.
  3. Add the ground almonds, sesame seeds, chia seeds, salt and pepper to a plate and mix together to combine.
  4. Arrange the chicken strips across a clean work surface.
  5. Coat each chicken piece in a generous layer of the sesame mayonnaise.
  6. Roll each coated chicken piece in the crumb mixture until evenly coated.
  7. Arrange the chicken pieces across the prepared oven tray. Bake for 18-20 minutes or until completely cooked through and golden brown.
