Sloppy joe sandwiches are a classic easy meal, but it’s not so easy on the keto diet when you also have to bake your own keto bread! A mashed cauliflower ‘potato’ base turns your sloppy joe filling into a properly sized meal component. Everything is glued together with good ol’ melted cheese.

Ingredients

  • 12 ounce cauliflower, raw
  • 2 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ½ tablespoon whipping cream, extra heavy/gourmet, not whipped
  • 1 ½ tablespoon butter, unsalted
  • 1 ¼ pound angus ground beef sirloin by private selection
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon cumin, ground
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne
  • 2 ½ tablespoon tomato paste
  • ½ cup beef broth
  • ¾ cup, shredded cheddar cheese, natural

Instructions

  1. Preheat an oven to 375 degrees. Cut the cauliflower into small florets and toss with the first amount of olive oil. Arrange across either a seasoned sheet tray or a tray lined with parchment paper. Bake the tray for 35-40 minutes, tossing the cauliflower halfway through.
  2. While the cauliflower is baking, cook the ground sirloin with the second amount of olive oil, salt, pepper, onion powder, garlic powder, cumin, paprika, and cayenne in a pot over medium heat. Cook until the meat is browned and the seasoning is fragrant.
  3. Turn the heat to low and stir in the tomato paste and beef broth. Place a lid on the pot and bring the pot to a simmer. Then, remove from the stove and set aside for later.
  4. When the cauliflower is done, transfer to a food processor. Pulse until blended to a firm mash with the salt, pepper, garlic clove, onion powder, heavy cream, and first amount of butter.
  5. Turn the oven heat down to 350 degrees. Spread the cauliflower mash in the base of a standard 9×13 glass baking dish. Spoon the sloppy joe filling over the mash. Then arrange the shredded cheese on top.
  6. Bake the dish in the oven openly for 10 minutes, just long enough for the cheese to melt and fir everything to heat through. Divide into 6 portions and serve with a spatula.
