This low carb slow-cooked pork makes a deliciously warming Keto dinner recipe. Our easy Keto stew is prepared with diced pork, juicy bell peppers, aromatic garlic and scallions, fragrant coriander, and a sweet and tangy broth of tomato, maple-flavored syrup, tamari sauce, and chicken stock. This warming stew is prepared in one pot and simply left to cook slowly on the stove until the sauce is reduced and the pork is tender.

Can I Make This in a Crockpot?

We have cooked our Keto pork recipe slowly over the stove in a Dutch oven. You may cook the recipe in a crockpot/slow cooker if preferred. You can pan fry the peppers and pork to brown first, then add all the ingredients to the crockpot, cooking on low for 6-8 hours. The pork should be tender and piping hot through.

Serving Suggestions?

This warming Keto stew is perfect served alongside some cauliflower rice. You could prepare a portion of rice separately or even stir the rice into the stew to heat through in the last minutes of cooking to soak up the juices. Alternatively, you can serve over some miracle noodles or zucchini spaghetti. Be sure to adjust your macros to account for any changes made to the original recipe.

Ingredients

  • 17 ½ ounce pork steak, cubed
  • 2 tablespoon tamari sauce
  • 2 clove garlic
  • 2 medium – 4 1/8" long scallions
  • 2 tablespoon cilantro or coriander leaves fresh or raw herb
  • 2 teaspoon coriander leaf, dried
  • 1 tablespoon maple flavored syrup by lakanto
  • 1 tablespoon tomato paste
  • 1 tablespoon olive oil
  • ¾ cup chicken broth, bouillon or consomme, ready-to-serve can
  • ½ large – 3" diameter x 3 3/4" red bell peppers, raw
  • ½ large – 3" diameter x 3 3/4" yellow bell peppers, raw

Instructions

  1. Heat the olive oil in a large saucepan/Dutch oven over a medium heat. Add the diced pork and cook until browned all over. Remove from the pan with a slotted spoon and set to one side.
  2. Thinly slice the peppers, garlic, and scallions. Add to the pan used to cook the pork. Pan fry over a low/medium heat for a few minutes until tender and fragrant.
  3. Add the ground coriander, tomato paste, tamari sauce, and lakanto syrup to the pan. Return the pork and stir well to combine. You may add more or less seasonings as desired.
  4. Add the chicken stock and stir well. Bring to a boil. Reduce the stock to a simmer, cover and cook gently for 1 hour. Uncover and cook for a further 15 minutes until the pork is very tender and the sauce is reduced. Serve with your preferred Keto sides and top with chopped fresh cilantro.
