I love this Southwest Chicken Avocado Salad because it requires no cooking whatsoever because the recipe uses a rotisserie chicken! This is great for the summer months when it’s hot and you don’t want to turn the oven on, let alone, cook. I have spiced up the salad with curry and chipotle powder which gives it smokiness and heat! Serve with lettuce or as is.

Ingredients

  • 1 avocado, California (black skin) avocado
  • 3 tablespoon mayonnaise
  • ½ teaspoon curry powder
  • ½ teaspoon ground chipotle chile by spice islands
  • ½ teaspoon kosher salt
  • 4 cup, cooked, diced rotisserie chicken
  • 1 ½ medium (7 in. long) cucumber
  • ½ cup, diced celery
  • 1 ½ tablespoon lime juice raw
  • ¼ cup cilantro

Instructions

  1. Remove pit and skin from the avocado and smash it in a large mixing bowl along with mayo, curry powder, chipotle powder and salt.
  2. Cut rotisserie chicken into small dices. As well as the cucumbers and celery.
  3. Combine all ingredients in the large mixing bowl and add lime juice and cilantro. Taste for seasonings and adjust to your liking adding more salt, lime juice, curry or chipotle powder to your liking!
