This tasty Keto chicken recipe is loaded with flavors inspired by Spanish cuisine. Our low carb dinner recipe is prepared with tender chicken drumsticks, Spanish chorizo, juicy cherry tomatoes, garlic powder, smoky paprika, a hint of lemon zest, and aromatic fresh rosemary. Once prepared, this one-pan dish is simply oven-baked until the chicken is golden and the tomatoes are bursting and caramelized.

Can I Use a Different Cut of Chicken?

We have used drumsticks for our Keto chicken recipe. Drumsticks are a great cut as they are full of fats and flavor as well as being a budget-friendly option. If preferred, you may use an alternative cut of meat such as bone-in thighs or breasts. Please be sure to adjust your cooking times and macros for different cuts. You may also wish to increase seasonings if needed.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 4 medium chicken drumstick with skin
  • 2 ½ oz fresh food spanish chorizo
  • 10 cherry cherry tomato
  • ¼ teaspoon garlic powder
  • 1 teaspoon gourmet collection smoked paprika
  • 1 teaspoon lemon peel or zest raw
  • 1 tablespoon rosemary, fresh
  • ½ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. Roughly chop the chorizo into bite-sized chunks. Arrange the tomatoes, whole, in a medium-sized oven dish with the diced chorizo.
  2. Nestle the chicken drumsticks in amongst the tomatoes and chorizo. Finely chop the rosemary. Sprinkle the rosemary, paprika, garlic powder, lemon zest, salt, and pepper over the chicken, tomato, and chorizo. Drizzle over the olive oil.
  3. Transfer the tray to the oven. Bake for 35-40 minutes until the chicken is completely cooked through and the skin is crisp and golden. Baste the chicken with the chorizo pan juices halfway through cooking. Serve hot over your favorite Keto sides.
