About

This whole chicken is cooked slowly in a crockpot until juicy and tender and smothered with spicy seasonings.

This is a great option for families served with cauliflower rice or roasted vegetables.

Ingredients

  • 2 large – stalk – 11" to 12" long celery stalks
  • 2 clove garlic
  • 1 3 lb whole chicken, raw
  • 1 small white onion
  • 1 teaspoon oregano, ground
  • 1 teaspoon gourmet collection smoked paprika by mccormick
  • 1 teaspoon red pepper (cayenne), ground
  • 1 teaspoon lemon peel or zest raw
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin, ground
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Peel and roughly dice the onion, roughly chop the celery and peel the garlic. Arrange in the bottom of the crockpot.
  2. Add the chicken and sprinkle over all the dried herbs, spices, zest, salt and pepper. Rub the seasonings all over the chicken.
  3. Turn the heat to high and cook for five hours or until completely cooked through and the juices run clear. You can serve with some of the pan juices or use them as a base to make a rich gravy!
