These spicy cabbage noodles are tossed with jumbo shrimp, fiery ginger, red pepper flakes and aromatic cilantro.
This quick and easy dish makes a great dinner or lunch – perfect when you are short on time.
Ingredients
- 2 cup cabbage
- 1 clove garlic
- 1 slice – 1" diameter ginger root, raw
- 1 teaspoon crushed red pepper flakes by 365
- 1 tablespoon coconut oil
- 6 ounce jumbo raw shrimp peeled & deveined tail off by stop & shop
- ¼ teaspoon salt, sea salt
- ¼ cup, chopped cilantro
- ⅛ teaspoon black pepper
Instructions
- Heat the coconut oil in a pan over a low/medium heat. Mince the garlic and grate the ginger. Add to the pan along with the red pepper flakes and sweat gently until tender and fragrant.
- Slice the cabbage into 1 cm strips and add to the pan. Stir well to coat the cabbage in the oil and seasonings and cook for 2-3 minutes until tender.
- Add the shrimp to pan and toss to combine. Season to taste and continue to cook until the shrimp turn pink and are piping hot through.
- Stir through fresh cilantro to serve.
