These beef-based meatballs are fattened up with mayo and mixed with heaping portions of thin-sliced pepperoni and chopped spinach. Each meatball has extra flavor and tender texture from the pepperoni, and a little green from the spinach acts as a healthy filler. Eat these with keto zoodles, your favorite keto sauce, or melt mozzarella cheese over the meatballs.

Ingredients

  • 20 ounce ground beef
  • ¾ ounce pepperoni
  • ¾ ounce spinach
  • 2 tablespoon mayonnaise
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon mustard powder
  • ½ teaspoon paprika

Instructions

  1. Preheat an oven to 375 degrees. In a large mixing bowl, combine the ground beef with chopped thin-sliced pepperoni, finely chopped basil, mayo, and all the seasonings.
  2. Line a sheet tray with parchment paper. Create 22-24 meatballs that are approx. 1 ½ inches wide and arrange on the sheet tray.
  3. Bake the tray of meatballs for 20 minutes, no rotating required! At your discretion, you can bake the meatballs on a baking rack set over a tray to allow excess fat to drip – this should not change your baking time.
