  • 8 ounce beef steak, sirloin, visible fat eaten
  • 1 ½ tablespoon, crumbled blue cheese
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1 tablespoon cream cheese spread
  • ¼ cup heavy cream
  • ⅛ teaspoon black pepper

Instructions

  1. Heat the olive oil in a large frying pan over a high heat. Lightly season the steaks and add to the pan one at a time, cooking to preference. Set aside to rest, keeping the steak warm.
  2. To prepare the sauce, melt the butter in a small pan over a low/medium heat. Mince the garlic and add to the butter, gently sweating until tender.
  3. Add the cream cheese and stir into the butter until melted.
  4. Add the heavy cream to the pan and bring to a very gentle boil. Season with a little black pepper and simmer gently for a few minutes to thicken. Crumble the blue cheese into the sauce and stir to combine until just melted.
  5. Serve the sauce over the rested steaks.
