These juicy breaded chicken thighs are basted in rich tahini and coated in a spiced crumb.

Ideal with cauliflower rice, slaw or a simple salad!

Ingredients

  • 4 medium chicken thigh, skin removed before cooking
  • 2 teaspoon cumin, ground
  • 2 tablespoon tahini
  • 4 ounce food cupboard home baking almonds ground by sainsbury's
  • 1 teaspoon spices coriander seed or ground
  • ½ teaspoon ginger, ground
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and lightly grease an oven tray with oil.
  2. Add the ground almonds to a mixing bowl with all of the dried spices and seasonings. Mix well to combine.
  3. Liberally coat each chicken thigh all over with tahini.
  4. Cover each thigh in the spiced breadcrumb mixture, pressing down gently so that it sticks.
  5. Transfer to the oven for 20-23 minutes to bake or until cooked through and golden brown.
