Ingredients

  • 1.6 pound virginia ham (country ham), visible fat eaten
  • 1 ½ tablespoon maple flavored syrup by lakanto
  • 1 ½ teaspoon dijon mustard
  • 1 teaspoon orange juice
  • ½ teaspoon cinnamon, ground
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit. Add the ham to a shallow oven tray and cover with foil. Transfer the tray to the oven and bake the ham for 45 minutes. While the ham is cooking, Add the syrup, cinnamon, mustard, orange juice, salt and pepper to a small bowl. Stir well to combine. You may adjust the quantities of seasonings as desired to suit your personal taste.
  2. After 45 minutes, remove the ham from the oven and take off the foil. Carefully score the soft fat around the edge of the ham with a sharp knife, into a criss-cross pattern. Brush half the mustard maple dressing over the meat and into the scored fat. Return to the oven for 15 minutes.
  3. After 15 minutes, baste the ham and fat with the remaining dressing and any pan juices. Return to the oven for a further 15 minutes or until golden and entirely cooked through. Serve hot or cold.
