Just a few minutes of prep time is needed, and you can go about your day during cooking. When it’s time to eat, you can have your side dish prepped and cooked in about 10 minutes. Chunks of seasoned chicken are stewed for hours with fresh in-season tomatoes and whole basil leaves. Zero-carb shirataki noodles are cooked up in simple garlic butter to absorb the flavor. A drizzle of golden extra virgin olive oil finishes off your pasta. At your discretion, you’re welcome to add grated parmesan cheese or extra chopped basil to your pasta!

Can I Use Miracle Noodles?

Good news! “Miracle Noodles” are just another name for shirataki noodles. Depending on the area you live in, shirataki noodles can be marketed with different names. Miracle Noodles come in different classic pasta shapes. But they’re named after white waterfalls because of the traditional ramen noodle shape they are made in. The main ingredient of shirataki noodles is the konjac yam, which is extremely low in carbohydrates. A full serving of shirataki noodles can be as little as 0g carbs!

Meal Prepping Or A Delicious Dinner

This Keto Crock Pot recipe is extremely easy, and it’s a great meal prep recipe with little time investment needed. Let your tomato basil chicken fully cool after cooking before storing it in meal prep containers. You can make buttered garlic shirataki noodles in bulk to store in the same containers. You can easily microwave this meal when you’re ready to eat! Adults or kids will enjoy the stewed chicken and tomatoes with a pasta side dish at the dinner table for a family-style meal too.

Ingredients

  • 1 pound chicken breast boneless skinless raw
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon onion powder
  • ½ teaspoon italian seasoning
  • ½ teaspoon olive oil
  • 7.5 ounce tomato raw (includes cherry, grape, roma)
  • 10 leaf basil
  • 16 ounce japanese white shirataki noodles by yutaka
  • 3 tablespoon unsalted butter
  • 4 teaspoon garlic
  • 2 teaspoon extra virgin olive oil

Instructions

  1. Prepare the tomato basil chicken either early in the day or before going to work. Start by patting whole chicken breasts dry with a paper towel. Cut the chicken breast into 1-2-bite pieces and add to a mixing bowl. Mix the chicken with the salt, pepper, onion powder, italian seasoning, and olive oil. If there are any additional seasonings you want to add to taste, do so now.
  2. Pour the seasoned chicken pieces in the base of a Crock Pot. Cut your tomatoes into halves or quarters, and place the tomatoes over the chicken. Add whole basil leaves to the top of the ingredients. If you don’t have grape tomatoes, you can substitute with any type of tomato. Cherry tomatoes, Roma, Plum, or Heirloom are all acceptable substitutions.
  3. Cook the tomato basil chicken on high heat for 4 hours. You can also cook on low heat for 8 hours. After cooking, stir all the ingredients together with a large spoon. The tomatoes will naturally fall apart as you stir the chicken together. Keep the tomato basil chicken warm in the Crock Pot for serving or portion into meal prep containers.
  4. When the chicken is near done cooking, you can prepare the buttered garlic noodles. Drain the shirataki noodles and rinse them clean in a colander. While the noodles are draining, melt the butter in a pot over low heat on the stove. Add minced garlic to the melted butter and let it cook until the garlic starts to turn golden.
  5. Add the drained shirataki noodles to the warm garlic butter. You can turn the heat up slightly to bring the pot to a simmer. Let all excess water evaporate from the noodles as they soak up the garlic butter flavor. Remove the pot from the heat once the liquid is all evaporated. Stir the extra virgin olive oil into the noodles to lubricate them and serve about 3 ounces of cooked noodles with each serving of chicken.
