This quick and easy turkey stir fry is packed with tender shredded sprouts, sweet onion, aromatic sage and tart dried cranberries.

This makes a great weeknight dinner served on a bed of cauliflower rice.

Ingredients

  • 1 ½ cup, whole pieces brussels sprouts
  • 1 ounce ground turkey
  • 1 clove garlic
  • 1 tablespoon reduced sugar craisin dried cranberries by ocean spray
  • 1 teaspoon sage, dried
  • 1 tablespoon olive oil
  • 1 tablespoon, chopped red onion
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Thinly slice the onion and crush the garlic. Heat the oil in a skillet over a low/medium heat. Add the onion and garlic and sweat gently until soft.
  2. Thinly slice the sprouts and add to the skillet along with the ground turkey, sage, salt and pepper. Stir well to combine and pan fry over a medium/high heat until the turkey is cooked through and the sprouts tender and golden. You can add a little stock or water whilst cooking if the pan gets too dry.
  3. Stir through the dried cranberries to serve.
