These simple yet tasty halloumi kebabs are oven grilled but would also make a great addition to the summer BBQ.

Marinated in refreshing mint and aromatic oregano, these halloumi kebabs make a lovely vegetarian dinner option served with a simple green salad.

Ingredients

  • 9 ounce halloumi cheese by pallas
  • 8 cherry cherry tomatoes
  • 2 tablespoon olive oil
  • 2 small zucchini
  • 1 clove garlic
  • 1 tablespoon peppermint fresh mint
  • 1 tablespoon oregano leaves by no name
  • ½ lemon yields lemon juice raw
  • 0.2 teaspoon black pepper
  • 0.2 teaspoon salt

Instructions

  1. Add 4 wooden skewers to a large dish and cover with water to soak.
  2. Slice the zucchini into discs about 1 cm thick (you need 12 discs), and add to a large mixing bowl with the cherry tomatoes. Dice the halloumi into chunks about 1 inch long (you need 8 pieces) and add to the bowl. Season with salt and pepper.
  3. Finely chop the mint and the oregano and add to the bowl.
  4. Add the lemon juice, olive oil and crushed garlic. Mix together well with your hands to ensure the vegetables and cheese are evenly covered in the marinade.
  5. Cover the bowl and transfer to the fridge to marinade for 20 minutes.
  6. Remove the marinated mixture from the fridge and thread the vegetables onto the kebab skewers, Each skewer should have 3 discs of zucchini, 2 cherry tomatoes and 2 cubes of halloumi.
  7. Heat a grill to medium and arrange the skewers side by side over a grill tray.
  8. Place under the grill to cook for 8-10 minutes or until the zucchini is tender and the cheese is starting to slightly soften and turn golden.
