This warm kale salad is packed with flavour and texture from salty bacon, creamy avocado, crunchy pine nuts and tangy parmesan.

This makes a great lunch or light dinner option.

Ingredients

  • 4 cup kale
  • 3 slice – 6" long bacon
  • 1 each avocado
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon, whole pieces pine nuts
  • 1 tablespoon, grated parmesan cheese
  • 1 tablespoon olive oil
  • ¼ medium – 2 1/2" diameter red onion
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat the olive oil in a skillet over a medium heat. Add the bacon and cook through until crisp and golden. Remove from the pan with a slotted spoon, leaving the fat behind and set to one side.
  2. Thinly slice the onion and add to the pan with the bacon fat, sweating for a minute to soften. Add the kale and pine nuts and pan fry for a few minutes until the kale is just wilted and the pine nuts golden.
  3. Add the pan fried kale to a large salad bowl. Slice the avocado and tear the bacon into bite sized pieces. Add to the bowl, season and toss to combine.
  4. Drizzle over the balsamic vinegar and sprinkle with the parmesan to serve.
