This delicious dish is packed with flavor from the zesty tang of lemon to the creaminess of cheese, and just a hint of aromatic basil.

The chicken is foil baked so it steams gently as it cooks, retaining its moisture and all the flavors. Perfect served with a fresh green salad or with a side of roasted asparagus.

Ingredients

  • 2 large breast (yield after cooking, bone and skin removed) chicken breast
  • 5 ounce cream cheese
  • 1 clove garlic
  • ½ cup spinach raw
  • ¼ cup basil fresh
  • ½ lemon yields lemon juice raw
  • 1 tablespoon lemon peel raw
  • ¼ teaspoon salt
  • 0.2 teaspoon black pepper

Instructions

  1. Preheat the oven to 390 degrees Fahrenheit and lay a large piece of foil across a shallow oven tray.
  2. Add the cream cheese, half the lemon zest, the spinach, crushed garlic and basil to a mixing bowl.
  3. Season generously and stir well to combine.
  4. Lay the chicken breasts on a clean work surface and use a sharp knife to score down the center of each breast, making a pocket in the center.
  5. Spoon the mixture evenly between each chicken breast, filling the pocket completely.
  6. Season each chicken breast with salt and pepper and the remaining zest.
  7. Lay the chicken breasts on the foil and drizzle with the lemon juice. Fold the excess foil over and around the chicken forming a loose parcel.
  8. Transfer to the oven to bake for 23-25 minutes, until the chicken is cooked through.
