If you want a meal that feels fancy or can be made for your next party, look no further than these zucchini rolls! These are dairy-free and hold together nicely due to the egg in the pork filling. To ensure that the rolls stay tight during baking, arrange the rolls so the ends of the zucchini strips are facing inward. Feel free to top these with your favorite tomato sauce or mozzarella cheese.

Ingredients

  • ½ pound ground pork
  • 1 tablespoon olive oil
  • 2 clove garlic
  • 1 2 tbsp, chopped basil
  • 1 tablespoon tomato paste
  • 1 teaspoon balsamic vinegar
  • ¼ teaspoon salt
  • 1 large egg
  • 2 small zucchini

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Thinly slice zucchini lengthwise.
  2. Drizzle ½ tablespoon of olive oil on the zucchini and rub all sides of the zucchini slices with them. Sprinkle with salt and bake for 10-15 minutes in the oven until they start to soften.
  3. While the zucchini is baking, heat the remaining olive oil in a pan over medium heat. Once hot, mince or grate the garlic into the pan. Stir until the garlic is fragrant, then crumble up the ground pork and add it to the pan.
  4. Brown the pork until the pork starts to brown in its own juices, then add the tomato paste, balsamic vinegar, and ¼ tsp. salt. Saute for 2-3 minutes, then remove from the heat and stir in chopped basil. Allow to cool slightly. Whisk an egg and mix it into the pork mixture.
  5. Add a small amount of pork filling to the center of zucchini slice and roll the zucchini up. Place the zucchini roll filling side up onto a parchment covered pan or dish. Continue with the remaining slices until all of the pork filling is used up. Make sure the rolls are touching, as this will help them from unrolling.
  6. Bake at 375 degrees for 15-20 minutes. Top with cheese during the last 5 minutes if you’d like!
