A salad doesn’t get more simple than this! I love how the cucumber is so crisp and sweet next to ripe and fatty avocado. A little lime juice and salt ties this dish together so it’s ready to be served next to your favorite roast.
Ingredients
- 1 ½ medium (7 in. long) cucumber
- 2 avocado, California (black skin) avocado
- ¼ teaspoon kosher salt
- 1 tablespoon lime juice raw
- ¼ cup cilantro
Instructions
- Cut cucumber into thirds or fourths lengthwise. Then cut each section into four.
- Cut each avocado in half and remove the pit and skin. Dice into 1” cubes.
- Toss cucumbers, avocados, salt, lime juice and cilantro together in a bowl. Taste and adjust lime and salt to your liking.
