This fresh and healthy salad is light in the stomach but has lots of complimentary flavors for a bright lunch. Your greens are dressed in a refreshingly tangy, low carb dressing and topped with a mix of green avocado, whole chopped mozzarella, and juicy grape tomatoes.

Ingredients

  • 2 ½ ounce lettuce
  • ½ ounce arugula
  • 1 tablespoon olive oil
  • ¼ teaspoon white wine vinegar by alessi
  • 1 ½ teaspoon lemon juice
  • ⅛ teaspoon salt
  • 1 ¾ ounce avocado
  • 1 ½ ounce mozzarella cheese, whole milk
  • 1 ½ ounce grape tomato
  • ¼ teaspoon oregano, dried

Instructions

  1. Chop your lettuce greens and arugula. Toss them in a mixing bowl with the olive oil, white wine vinegar, lemon juice, and salt. Arrange this dressed salad on your serving plate.
  2. Chop the avocado and mozzarella, and halve the grape tomatoes. You can toss these together in the same mixing bowl you dressed the salad in. Toss the ingredients with the oregano until all the chopped pieces are coated in herbs and leftover dressing.
  3. Serve and enjoy immediately.
