This delicious keto salad is packed with flavor and texture from crisp lettuce to crunchy bacon and smooth sour cream.

This is a great salad for sharing and ideal for a light dinner.

Ingredients

  • 4 slice – 6" long bacon
  • 2 teaspoon, cut pieces chives
  • 2 tablespoon sour cream
  • 2 small – 3" long scallions
  • 2 tablespoon olive oil
  • 2 cup, chopped romaine lettuce
  • 1 cup rotisserie chicken
  • ½ cup, grated cheddar cheese
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper, ground

Instructions

  1. Heat a tablespoon of olive oil in a frying pan over a medium heat. Add the bacon and cook until crisp. Set aside to cool.
  2. Roughly slice the lettuce and thinly slice the scallions. Add to a salad bowl and toss to combine.
  3. Tear the chicken into bite sized chunks and add to the bowl. Snap the crisp bacon into bite sized pieces and add to the bowl. Season and drizzle with olive oil, toss to combine.
  4. Scatter over the grated cheese, salt and pepper. Toss to combine.
  5. Spoon the sour cream onto the salad and finely chop the chives over the salad to serve.
