This side salad is bright, zesty, and crisp! It can accompany a salmon dish or chicken dish perfectly, but it’s great for cutting any rich flavors in your meal. An olive oil based lemon-vinaigrette keeps your fat macros in check.

Ingredients

  • 1 ounce romaine lettuce
  • 1 ounce arugula
  • 4 gram basil
  • 3 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon white wine vinegar by alessi
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • ½ teaspoon lemon peel or zest raw
  • ¼ ounce parmesan cheese

Instructions

  1. In a mixing bowl, combine chopped romaine lettuce with arugula and a little under ¼ oz of chopped basil leaves.
  2. In a small mixing bowl, whisk together the olive oil, lemon juice, vinegar, salt, and pepper.
  3. Toss the salad with the lemon vinaigrette before serving. Garnish the full salad with lemon zest and shaved or grated parmesan. Enjoy!
