This refreshing salad is loaded with crisp low carb vegetables, creamy avocado, crunchy sunflower seeds and a citrusy dressing.

This makes a great side salad, perfect to accompany a protein of your choice.

Ingredients

  • 4 medium – 3/4" to 1" diameter radish, raw
  • 2 small – 3" long scallions
  • 2 cup iceberg lettuce
  • 2 tablespoon olive oil
  • 1 tablespoon parsley, fresh
  • 1 each avocado
  • 1 tablespoon red onion
  • 1 medium – stalk – 7 1/2" to 8" long celery
  • 1 tablespoon, whole pieces sunflower seeds
  • 1 teaspoon lemon juice
  • 1 teaspoon lime juice, fresh
  • ½ medium – 2 1/2" diameter x 2 3/4" yellow bell peppers, raw
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Roughly chop the lettuce, dice the avocado and celery and thinly slice the scallions, bell pepper and radishes. Add to a large serving bowl along with the parsley, red onion and sunflower seeds. Season with salt and pepper and toss to combine.
  2. Whisk together the olive oil, lemon and lime juice. Drizzle over the salad and toss before serving.
