This simple keto salad is loaded with flavor and texture from peppery arugula and radish, sweet cranberries and candied walnuts, topped with tangy feta cheese.

This is a great light lunch option for summer or BBQ side!

Ingredients

  • 4 medium – 3/4" to 1" diameter radish, raw
  • 2 cup arugula
  • 1 tablespoon olive oil
  • ¼ cup walnuts
  • ¼ cup feta cheese
  • ½ tablespoon maple flavored syrup by lakanto
  • ½ tablespoon balsamic vinegar
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper
  • 1 tablespoon reduced sugar craisin dried cranberries by ocean spray

Instructions

  1. Thinly slice the radishes and add to a serving bowl with the arugula and cranberries. Season to taste and toss to combine.
  2. Add the walnuts to a dry skillet and drizzle over the syrup. Toast gently over a low/medium heat for 3-4 minutes, coating the walnuts in the syrup.
  3. Crumble the feta cheese over the salad.
  4. Scatter over the caramelized walnuts.
  5. Whisk together the oil and vinegar and drizzle over the salad to serve.
