This simple keto salad is loaded with flavor and texture from peppery arugula and radish, sweet cranberries and candied walnuts, topped with tangy feta cheese.
This is a great light lunch option for summer or BBQ side!
Ingredients
- 4 medium – 3/4" to 1" diameter radish, raw
- 2 cup arugula
- 1 tablespoon olive oil
- ¼ cup walnuts
- ¼ cup feta cheese
- ½ tablespoon maple flavored syrup by lakanto
- ½ tablespoon balsamic vinegar
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
- 1 tablespoon reduced sugar craisin dried cranberries by ocean spray
Instructions
- Thinly slice the radishes and add to a serving bowl with the arugula and cranberries. Season to taste and toss to combine.
- Add the walnuts to a dry skillet and drizzle over the syrup. Toast gently over a low/medium heat for 3-4 minutes, coating the walnuts in the syrup.
- Crumble the feta cheese over the salad.
- Scatter over the caramelized walnuts.
- Whisk together the oil and vinegar and drizzle over the salad to serve.
