Don’t let the name fool you – this salad is loaded with Italian-inspired toppings and will bring a whole new meaning to salad for you. There is plenty of healthy fats throughout the salad, a touch of protein, and all naturally low-carb mix-ins. This recipe is also paired with a simple Italian vinaigrette as well. You’ll feel like you’re cheating on your keto diet, when you’re really not!

Ingredients

  • 1 ½ ounce artichoke hearts or globe, canned in oil mixture
  • ½ ounce mild banana pepper rings by mt olive
  • 8 olives pitted greek kalamata olives by mezzetta
  • ¼ ounce pepperoni
  • ¼ ounce salami
  • 2 ounce romaine lettuce
  • 1 tablespoon olive oil
  • ½ teaspoon red wine vinegar
  • 1 clove garlic, fresh
  • ⅛ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ½ teaspoon italian seasoning
  • ½ tablespoon, grated parmesan cheese
  • ½ tablespoon, shredded parmesan cheese

Instructions

  1. Chop the artichoke hearts, banana pepper rings, kalamata olives, pepperoni, and salami. Toss these ingredients together in a bowl and set aside.
  2. Arrange chopped romaine lettuce on a plate. Then, top the salad with the ingredients from step 1. You may toss the salad completely together, or keep the “garbage” on top.
  3. To make the vinaigrette, quickly whisk together the olive oil, red wine vinegar, garlic clove (minced), salt, pepper, italian seasoning, and grated parmesan. Serve this on the side for drizzling, or you may toss it with your salad.
  4. Top off your salad with the remaining shredded parmesan and enjoy!
