This keto cheese salad is ideal for meal prepping in mason jars to create a portable lunch.
This salad makes one hearty lunch portion or light dinner. Simply multiply the ingredients accordingly for meal prepping.
Ingredients
- 2 cherry cherry tomato
- 2 tablespoon, grated cheddar cheese
- 1 cup, chopped lettuce, romaine or cos
- 1 small – 3" long scallions
- 1 medium hard boiled egg
- 1 tablespoon, grated mozzarella cheese
- 1 tablespoon mayonnaise
- 1 tablespoon, grated parmesan cheese
- ¼ teaspoon salt, sea salt
- ¼ cup, sliced cucumber
- ⅛ teaspoon black pepper
- 1 tablespoon extra virgin olive oil
Instructions
- Roughly slice the lettuce and finely slice the tomatoes. Layer the lettuce in the base of a mason jar or serving bowl and top with the tomatoes.
- Dice the cucumber and slice the scallions. Layer over the tomatoes.
- Slice the egg and layer over the salad.
- Scatter the cheddar and mozzarella over the top of the egg.
- Mix together the Parmesan, olive oil mayonnaise, salt and pepper. Spoon over the salad to serve.
