This keto cheese salad is ideal for meal prepping in mason jars to create a portable lunch.

This salad makes one hearty lunch portion or light dinner. Simply multiply the ingredients accordingly for meal prepping.

Ingredients

  • 2 cherry cherry tomato
  • 2 tablespoon, grated cheddar cheese
  • 1 cup, chopped lettuce, romaine or cos
  • 1 small – 3" long scallions
  • 1 medium hard boiled egg
  • 1 tablespoon, grated mozzarella cheese
  • 1 tablespoon mayonnaise
  • 1 tablespoon, grated parmesan cheese
  • ¼ teaspoon salt, sea salt
  • ¼ cup, sliced cucumber
  • ⅛ teaspoon black pepper
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Roughly slice the lettuce and finely slice the tomatoes. Layer the lettuce in the base of a mason jar or serving bowl and top with the tomatoes.
  2. Dice the cucumber and slice the scallions. Layer over the tomatoes.
  3. Slice the egg and layer over the salad.
  4. Scatter the cheddar and mozzarella over the top of the egg.
  5. Mix together the Parmesan, olive oil mayonnaise, salt and pepper. Spoon over the salad to serve.
