This simple keto salad has a cauliflower rice base, and is complemented by classic Mediterranean flavors.

This dish works well as a salad in its own right or as a side to grilled meat.

Ingredients

  • 6 olives pitted kalamata olives by mezzetta
  • 3 cherry cherry tomato
  • 2 tablespoon feta cheese
  • 1 cup, cut pieces cauliflower rice
  • 1 tablespoon, chopped parsley, fresh
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 tablespoon, whole pieces pine nuts
  • ¼ medium – 2 1/2" diameter red onion
  • ⅓ cup, sliced cucumber
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the cauliflower rice to a mixing bowl.
  2. Finely slice the onion and olives and finely chop the tomatoes and cucumber.
  3. Add to the bowl along with the cauliflower rice. Crumble in the feta, season and drizzle over the lemon juice and oil.
  4. Mix well to combine.
  5. Scatter over chopped fresh parsley and pine nuts to serve.
