This quick and easy keto pasta salad is loaded with flavor from sweet roasted bell pepper, creamy mozzarella and aromatic fresh basil.

This is a great summer side salad, perfect with grilled chicken or pork.

Ingredients

  • 2 ½ ounce mozzarella cheese
  • 1 tablespoon olive oil
  • 1 medium cucumber
  • 1 small red bell peppers, sweet, raw or blanched, marinated in oil mixture
  • 1 tablespoon basil, fresh
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Peel the skin from the cucumber and discard. Peel the cucumber flesh into wide ribbons and add to a bowl. Sprinkle over the salt and toss to combine. Leave to sit for 15 minutes to help extract any excess liquid then drain completely.
  2. Tear the mozzarella into bite sized chunks and roughly chop the pepper and basil. Add to the bowl along with the cucumber noodles, black pepper and olive oil. Toss to combine.
