This simple salad is loaded with fats and flavor from low carb veggies, aromatic herbs, creamy avocado and tangy yogurt.

This quick and easy salad is a light and refreshing option for summer, perfect served alongside barbecued meats.

Ingredients

  • 4 small – 3" long scallions
  • 1 each avocado
  • 1 tablespoon cilantro
  • 1 tablespoon dannon all natural yogurt, plain
  • 1 teaspoon lime juice, fresh
  • ½ tablespoon olive oil
  • ½ medium cucumber
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Slice the cucumber in half and scoop the seeds from the center and discard. Slice the cucumber into half inch chunks and add to a mixing bowl.
  2. Roughly dice the avocado flesh and chop the scallions and cilantro. Add to the bowl with the cucumber and toss to combine.
  3. Whisk together the yogurt, olive oil, lime juice, salt and pepper. Spoon over the salad and stir well, coating everything in the dressing. Refrigerate until ready to serve.
