This simple salad is loaded with healthy fats from avocado and smoked mackerel and combined with a refreshing salad.
Perfect for lunches or a light dinner option.
Ingredients
- 2 fillet smoked mackerel fillets by tesco
- 2 tablespoon olive oil
- 2 cup baby spinach
- 1 small – 2 2/5" diameter tomato
- 1 tablespoon lime juice, fresh
- 1 tablespoon, whole pieces pumpkin seeds
- ½ each avocado
- ¼ medium – 2 1/2" diameter red onion
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat a tablespoon of olive oil in a frying pan over a medium/high heat. Add the mackerel and fry for 3-4 minutes until golden. Flip and cook for a further 1-2 minutes or until the fish is completely cooked through. Flake the fish into bite sized pieces and set aside.
- Add the spinach to a salad bowl. Dice the tomato, avocado and onion. Add to the bowl with the spinach and toss to combine.
- Add the flaked mackerel, lime juice, remaining olive oil, salt and pepper. Toss well to combine.
- Scatter with the pumpkin seeds to serve.
