This simple salad is loaded with healthy fats from avocado and smoked mackerel and combined with a refreshing salad.

Perfect for lunches or a light dinner option.

Ingredients

  • 2 fillet smoked mackerel fillets by tesco
  • 2 tablespoon olive oil
  • 2 cup baby spinach
  • 1 small – 2 2/5" diameter tomato
  • 1 tablespoon lime juice, fresh
  • 1 tablespoon, whole pieces pumpkin seeds
  • ½ each avocado
  • ¼ medium – 2 1/2" diameter red onion
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat a tablespoon of olive oil in a frying pan over a medium/high heat. Add the mackerel and fry for 3-4 minutes until golden. Flip and cook for a further 1-2 minutes or until the fish is completely cooked through. Flake the fish into bite sized pieces and set aside.
  2. Add the spinach to a salad bowl. Dice the tomato, avocado and onion. Add to the bowl with the spinach and toss to combine.
  3. Add the flaked mackerel, lime juice, remaining olive oil, salt and pepper. Toss well to combine.
  4. Scatter with the pumpkin seeds to serve.
