If you are a Keto Vegan, you will love this Keto Air Fryer recipe for Keto Vegan Taco Bowls! This recipe uses meatless grounds cooked in the air fryer and seasoned with taco spices (cumin, paprika, dark chili powder, and garlic powder). The meatless grounds are placed on top of shredded iceberg lettuce and topped with vegan cheese, sliced black olives, sliced cherry tomatoes, and poblano peppers. Vegans can feel free to add vegan sour cream on top or any other taco bowl-appropriate toppings within their carbs limits.

Ingredients

  • 1 ½ cup meatless grounds
  • ½ tablespoon avocado oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt, sea salt
  • ¼ teaspoon paprika
  • ½ teaspoon chili powder
  • ¼ teaspoon cumin, ground
  • 5 oz lettuce
  • 2 slice vegan cheese slices
  • 2 tablespoon olives black canned small to extra large
  • 6 grape tomato raw (includes cherry, grape, roma)
  • ¼ pepper poblano peppers, raw

Instructions

  1. Add the meatless grounds to the bottom of an air fryer basket with no rack inserted—Cook at 350 F for 2 minutes.
  2. Remove the basket from the air fryer and add avocado oil, garlic powder, sea salt, paprika, dark chili powder, and ground cumin to the mixture. Stir and cook for another 1-2 minutes at 350 F.
  3. In the meantime, prepare the bowls by filling them with shredded lettuce. Top the lettuce with the meatless mixture.
  4. Then top each bowl with chopped vegan cheese, black olives, sliced cherry tomatoes, and sliced poblano pepper (optional).
