  • 1 pound acorn squash
  • 2 tablespoon avocado oil
  • 1 tablespoon maple flavored syrup by lakanto
  • ½ teaspoon coarse kosher salt by morton

Instructions

  1. Remove as much of the skin from the acorn squash as possible if the skin is thick. If the skin is not thick, you can leave the skin on just be sure to wash the skin well.
  2. Cut the squash in half lengthwise.
  3. Remove the seeds and discard them.
  4. Slice the halved squash into ¼” slices.
  5. Trim each slice into a more rectangular/square shape. This will help make the evenest julienned fries as possible. Save the trimmings for another recipe. Slice each slice into julienne pieces.
  6. Place julienned pieces into a medium-sized mixing bowl, add Lakanto syrup, avocado oil, and kosher salt. Toss well to combine.
  7. Add half of the fries into the bottom of an air fryer fitted with a rack. Set fryer to 400 F and cook for 12 minutes.
  8. Remove fries and repeat with the second batch. Serve hot!
