These onion slices are cooked gently with balsamic vinegar and maple flavored syrup until soft and tender, then served with crispy diced bacon.

This makes a great side dish, perfect for topping grilled pork or chicken or stirred through cooked vegetables.

Ingredients

  • 4 slice – 6" long bacon
  • 1 large white onion
  • ½ tablespoon olive oil
  • 1 tablespoon unsalted butter
  • ½ tablespoon balsamic vinegar
  • 2 teaspoon maple flavored syrup by lakanto
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat the olive oil in a skillet over a medium/high heat. Roughly dice the bacon and add to the pan, cooking through until golden. Remove from the skillet with a slotted spoon and set to one side.
  2. Melt the butter in the same skillet over a medium heat. Thinly slice the onion and add to the pan, cooking for a minute until lightly golden, then turn the heat down to low and cook gently for a few minutes until soft.
  3. Add the vinegar, syrup, salt and pepper. Stir well to combine and continue cooking for a further 2-3 minutes until very soft and starting to caramelized.
  4. Stir through the crispy bacon pieces to serve.
