For a delicious and simple side dish or snack, these avocado slices wrapped in bacon cannot be beat! The saltiness from the bacon naturally seasons the avocado, plus it helps turn your avocados into easy finger food. They taste perfectly good left as is, or you can dip your avocado slices into Sriracha, mayo, or another keto condiment.

Ingredients

  • 6 ½ ounce avocado
  • 8 slice – 6" long bacon

Instructions

  1. Start by slicing a whole medium or large avocado into 8 thick pieces. The weight listed in the ingredients is the avocado weight after the pit as been removed. Also, choose an avocado that is a little under-ripe. You can also store your avocado in a refrigerator the night before, since the fruit is easier to handle when it is cold.
  2. If your bacon strips are packaged as 12-inch long pieces, slice 4 strips into 8, 6-inch slices. Wrap a single slice of bacon around each piece of avocado, trying to keep both ends of the bacon on the same side.
  3. In a pan over medium heat, place as many wrapped avocado slices as you can with the ends of the bacon strips down. This helps keep the bacon in place as it cooks and shrinks a little.
  4. Cook all avocado slices for 1-2 minutes per side and until the bacon is crispy, using a spatula to flip them. You can use a paper towel to soak up any excess grease you do not want after they have cooled.
