About

Have the side dish to your main course prepared quickly and conveniently in your air fryer while you cook the rest of your meal. These crispy, seasoned cabbage wedges cook up so well in your air fryer. What makes them even better is a generous wrapping of bacon! Let the salty bacon naturally tenderize and season the cabbage as well. Your kitchen is going to be smelling heavenly just before mealtime! This recipe also includes a pairing of tangy, fatty sauce that can either be drizzled over the cabbage wedges or served on the side for dipping. Enjoy flavors like onion, lemon, and a hint of horseradish.

What To Eat With Bacon Wrapped Cabbage Wedges

You’ve got your greens covered when you make this side dish! Your main course can have a focus on Keto-friendly fats and can afford a little more protein, potentially. Cauliflower fried “rice” with shrimp would match bacon wrapped cabbage very well. Cabbage is low-carb enough you could eat it alongside a slice of one of Carb Manager’s many Keto pizzas too. Does anything wrapped in bacon make you think of barbecue? Carb Manager has a growing list of barbecue recipes for main courses and other side dishes. Just search “barbecue” or “BBQ” in the recipe directory for ideas.

Other Ways To Personalize My Meal

After you’ve enjoyed making this bacon wrapped cabbage wedge and tangy sauce side dish a couple of times, you can upgrade some ingredients for new flavor combinations. Add chopped fresh herbs to the tangy sauce, or omit some of the vinegar-based ingredients to lighten up the “tang”. Don’t like ketchup? Substitute in a squirt of your favorite mustard instead. If bacon is getting boring, elevate your cabbage to “fancy” by wrapping it instead in slices of prosciutto. Just make sure to keep an eye on the prosciutto in your air fryer to avoid burning!

Ingredients

  • 8 ounce cabbage, green, raw
  • 4 teaspoon olive oil
  • ⅛ teaspoon seasoned salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon garlic powder
  • 6 slice – 6" long bacon
  • 2 tablespoon mayonnaise
  • ½ teaspoon ketchup
  • ¼ teaspoon horseradish
  • ⅛ teaspoon rice vinegar
  • ¼ teaspoon lemon juice
  • ¼ teaspoon garlic

Instructions

  1. Preheat an air fryer to 325 degrees and line a tray with parchment paper. Slice a 1-inch thick slice from the center of a cabbage head that weighs 8 ounces. Cut that slice into 2 half circles – this is 2 servings. Arrange the wedges on the lined tray and drizzle 2 tsp olive oil over each wedge. Sprinkle the seasoned salt, pepper, and garlic powder over the cabbage as well.
  2. Wrap 3 pieces of bacon around each cabbage wedges. Tuck the ends of the bacon strips either under the cabbage or under the strips themselves. Bake the wedges for 20 minutes, no flipping or rotating necessary.
  3. While the cabbage wedges are in the air fryer, make the tangy sauce. Whisk together the remaining ingredients. Additionally, whisk into the sauce a pinch each of salt, pepper, and onion powder. Add in any other seasonings you may like to the sauce. You can serve the sauce warm (microwaved for 10 seconds) and drizzled over the finished cabbage wedges or serve on the side.
