This is a simple side dish or part of your main course! Bacon is a great source of protein and fat in keto-friendly proportions. The bacon also saturates the cauliflower steaks in its natural fat and salt, so no extra oil is needed to make the cauliflower tender!

Ingredients

  • 8 ½ ounce cauliflower, raw
  • 12 slice – 6" long bacon
  • ½ teaspoon black pepper

Instructions

  1. Preheat an oven to 375 degrees and line a sheet tray with either parchment paper or aluminum foil. Remove the core from a cauliflower head and slice 4 steaks from the head about 1-inch thick each. If any of the steaks break in the middle, this is okay and can be remedied in the next step.
  2. Wrap about 3 pieces of bacon around each cauliflower steak. Make sure the ends of the bacon slightly overlap and tuck under the cauliflower. You can also use the bacon to keep any broken pieces of cauliflower in place. Sprinkle the pepper over the bacon.
  3. Bake the tray for 30 minutes. Then, gently flip the cauliflower over and bake for up to an additional 25 minutes. You want the bacon crisp but not brittle or burnt.
