Your snack time could not get easier. Your favorite bite-sized mushroom wrapped in bacon is the PERFECT keto snack! High fat with just enough protein and little carbs is exactly what you need in the middle of the day.

Ingredients

  • 6 ounce brown mushrooms (italian or crimini mushrooms), raw, high in vitamin d
  • 7 slice – 6" long bacon

Instructions

  1. Preheat an oven to 375 degrees. Rinse and slice approximately 10 whole mushrooms into halves (stems and all). Additionally, slice 7 strips of bacon into â…“ pieces (making 21 pieces of bacon total). You may be left with 1 or 2 extra pieces of bacon, depending on how many mushroom halves you have.
  2. Simply wrap 1 piece of bacon around each mushroom halve, making sure to tuck the edges of bacon under the mushrooms as you place them on a well seasoned sheet tray (or one lined with parchment paper).
  3. Bake the tray for 25-30 minutes, until the bacon is crispy. There may be excess grease, so you can rest the cooked mushrooms on a paper towel before serving to soak it up.
