This bacon wrapped cabbage is brushed with lakanto maple flavored syrup and balsamic vinegar to create a sweet and sticky glaze.

These caramelized cabbage bites are perfect for snacking or as a side to your main meal.

Ingredients

  • 12 slice – 6" long bacon
  • 1 tablespoon olive oil
  • 1 tablespoon maple flavored syrup by lakanto
  • 1 tablespoon balsamic vinegar
  • ½ medium – head – approx 5" diameter red cabbage
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Slice the cabbage into 8 wedges roughly 1/2 inch thick and 3 inches long. Sprinkle each cabbage wedge with a little salt and pepper, and drizzle over the olive oil. Rub the oil and seasonings into the cabbage wedges.
  3. Wrap each cabbage wedge with one strip of bacon. Slice the remaining bacon strips in half and wrap one half around each wedge. The wedges should be well wrapped with one and a half bacon slices each.
  4. Mix together the lakanto and balsamic. Brush the mixture into both sides of the bacon wrapped cabbage.
  5. Transfer to the oven to bake for 20 minutes or until the bacon is golden and caramelized and the cabbage is tender.
