This bbq bacon slaw combines crunchy red cabbage, radish and aromatic scallions with crispy bacon and a smoky mayonnaise.
This makes a great side dish to roasted chicken or pork.
Ingredients
- 4 large – 1" to 1 1/4" diameter radish
- 2 large scallions
- 2 slice – 6" long bacon
- 1 ½ tablespoon mayonnaise
- 1 cup red cabbage
- 1 teaspoon gourmet collection smoked paprika by mccormick
- ½ tablespoon lemon juice
- ½ tablespoon olive oil
- ½ teaspoon mustard
- ½ teaspoon cumin, ground
- ¼ teaspoon red pepper (cayenne), ground
- ¼ teaspoon garlic powder
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat the olive oil in a skillet over a medium heat. Add the bacon and cook through until crisp and golden. Set aside to cool.
- Thinly slice the cabbage and scallion and slice the radishes into matchsticks. Add to a mixing bowl and toss to combine.
- Add the mayonnaise, lemon juice, salt, pepper, paprika, mustard, cayenne, garlic powder and cumin to a small mixing bowl and stir together to combine.
- Spoon the mayonnaise over the sliced vegetables and stir well to coat.
- Finely chop the crispy bacon and add to the slaw before serving. Toss to combine.
