This bbq bacon slaw combines crunchy red cabbage, radish and aromatic scallions with crispy bacon and a smoky mayonnaise.

This makes a great side dish to roasted chicken or pork.

Ingredients

  • 4 large – 1" to 1 1/4" diameter radish
  • 2 large scallions
  • 2 slice – 6" long bacon
  • 1 ½ tablespoon mayonnaise
  • 1 cup red cabbage
  • 1 teaspoon gourmet collection smoked paprika by mccormick
  • ½ tablespoon lemon juice
  • ½ tablespoon olive oil
  • ½ teaspoon mustard
  • ½ teaspoon cumin, ground
  • ¼ teaspoon red pepper (cayenne), ground
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat the olive oil in a skillet over a medium heat. Add the bacon and cook through until crisp and golden. Set aside to cool.
  2. Thinly slice the cabbage and scallion and slice the radishes into matchsticks. Add to a mixing bowl and toss to combine.
  3. Add the mayonnaise, lemon juice, salt, pepper, paprika, mustard, cayenne, garlic powder and cumin to a small mixing bowl and stir together to combine.
  4. Spoon the mayonnaise over the sliced vegetables and stir well to coat.
  5. Finely chop the crispy bacon and add to the slaw before serving. Toss to combine.
