This braised kale is cooked with sweet red onion, juicy tomatoes and aromatic garlic in stock until deliciously tender.
This makes a great side to roasted meats or white fish.
Ingredients
- 2 cups organic tuscan kale by organics
- 2 medium – 2 3/5" diameter tomato raw (includes cherry, grape, roma)
- 1 ½ tablespoon olive oil
- 1 clove garlic
- 1 teaspoon lemon peel or zest raw
- ⅔ cup vegetable broth, bouillon or consomme
- ¼ medium – 2 1/2" diameter red onion
Instructions
- Heat the olive oil in a skillet over a low/medium heat. Thinly slice the onion and garlic and quarter the tomatoes. Add to the skillet and cook gently for 2-3 minutes until tender.
- Roughly chop the kale into the skillet and stir well to combine, cooking for a minute to soften.
- Add the stock and lemon zest and bring to a simmer. Stir well and simmer for 5-10 minutes until all the stock has evaporated and the kale is tender.
