This braised kale is cooked with sweet red onion, juicy tomatoes and aromatic garlic in stock until deliciously tender.

This makes a great side to roasted meats or white fish.

Ingredients

  • 2 cups organic tuscan kale by organics
  • 2 medium – 2 3/5" diameter tomato raw (includes cherry, grape, roma)
  • 1 ½ tablespoon olive oil
  • 1 clove garlic
  • 1 teaspoon lemon peel or zest raw
  • ⅔ cup vegetable broth, bouillon or consomme
  • ¼ medium – 2 1/2" diameter red onion

Instructions

  1. Heat the olive oil in a skillet over a low/medium heat. Thinly slice the onion and garlic and quarter the tomatoes. Add to the skillet and cook gently for 2-3 minutes until tender.
  2. Roughly chop the kale into the skillet and stir well to combine, cooking for a minute to soften.
  3. Add the stock and lemon zest and bring to a simmer. Stir well and simmer for 5-10 minutes until all the stock has evaporated and the kale is tender.
