This simple braised white cabbage is infused with the flavors of butter, aromatic onion and garlic, fragrant thyme and a hint of lemon zest.

This is a simple side, perfect to accompany chicken or pork and ideal for Sunday lunch.

Ingredients

  • 2 cup cabbage
  • 1 ½ tablespoon unsalted butter
  • 1 clove garlic
  • 1 teaspoon lemon peel or zest raw
  • 1 teaspoon, chopped thyme, fresh
  • ½ small onion
  • ½ cup vegetable broth, bouillon or consomme

Instructions

  1. Thinly slice the cabbage, onion and garlic. Melt the butter in a large saucepan over a medium heat. Add the cabbage, onion, garlic, lemon zest and thyme. Stir well to combine and sweat for 2-3 minutes until fragrant.
  2. Add the stock and bring to a gentle boil. Reduce to a steady simmer, cover and cook gently for 10 minutes stirring occasionally until the cabbage is soft and no liquid remains. Serve hot.
