This simple broccoli rice dish offers an alternative to cauliflower rice.

Quick and easy to prepare, this makes a great side for chicken or fish or a base for lunch meal prepping.

Ingredients

  • 4 Cup broccoli florets
  • 2 tablespoon olive oil
  • 2 teaspoon lemon juice, fresh
  • 1 teaspoon lemon peel or zest raw
  • 1 tablespoon, whole pieces pine nuts
  • 1 clove garlic
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Trim the tops of the broccoli florets using kitchen scissors to create small rice sized grains. You should have around two cups of rice.
  2. Add the pine nuts to a dry pan over a low heat and toast for a minute or two until lightly golden. Set aside.
  3. Heat a tablespoon of olive oil in a small pan over a low/medium heat. Finely slice the garlic and add to the pan, sweating until tender.
  4. Add the broccoli grains, lemon juice, remaining olive oil, lemon zest, salt and pepper and stir well to combine. Cook for just a minute or two until the broccoli is hot through.
  5. Top the rice with the toasted pine nuts to serve.
