This quick and easy Keto recipe is a great way to jazz up frozen cauliflower. Our simple low carb side is prepared with frozen cauliflower florets, tender white onion, garlic powder, a generous helping of butter, and finished with some parmesan cheese. This is perfect for using up any cauliflower you may have in the freezer!

Do I Need to Thaw the Cauliflower?

We have used frozen cauliflower florets for this Keto side recipe. Low carb frozen vegetables are a great option for convenience and are a good Keto staple to have on hand. The cauliflower does not need thawing before cooking and can be added directly to the oven tray frozen. You can, of course, also make the recipe with fresh cauliflower florets, adjusting the cooking times as needed.

Can I Make This Dairy-Free?

We have cooked our cauliflower florets in butter for a rich and creamy flavor and to enhance the taste of the roasted cauliflower. We have then dusted the cauliflower in grated Parmesan to serve. If you would like to make the recipe dairy-free, you can sub the butter for olive oil or coconut oil, and the grated Parmesan can be swapped for nutritional yeast. Please be sure to adjust your macros to account for any changes made to the original recipe.

Ingredients

  • 3 cup (1" pieces) cauliflower frozen unprepared
  • 2 tablespoon parmesan cheese, dry (grated)
  • 1 ½ tablespoon butter, unsalted
  • ½ medium – 2 1/2" diameter onion
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. Arrange the frozen cauliflower across a shallow oven tray. Roughly chop the onion and the butter. Arrange the onion in amongst the cauliflower. Randomly scatter the butter over the vegetables. Sprinkle over the salt, pepper and garlic powder. Transfer to the oven to bake for 15 minutes.
  2. Remove the tray from the oven. Turn the cauliflower and onion over in the tray. Spoon over the melted garlicky butter. Return to the oven for a further 12-15 minutes or until the cauliflower is tender and starting to caramelize in places.
  3. After this time, the cauliflower should be cooked through and lightly golden all over. Sprinkle the grated parmesan cheese over the hot cauliflower. Serve the dish hot with your preferred Keto mains.
