These zesty roasted mushrooms and asparagus are baked until tender in aromatic garlic, lemon and butter.
These make a great side to white fish, chicken or pork.
Ingredients
- 10 medium – spear – 5 1/4" to 7" long asparagus
- 6 medium mushrooms
- 1 tablespoon breakfast butter melted by country buffet
- 1 tablespoon olive oil
- 1 teaspoon lemon peel or zest raw
- 1 clove garlic
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Slice the mushrooms and remove the tough ends from the asparagus. Arrange in a small oven proof dish.
- Crush the garlic and add to a small bowl along with the melted butter, olive oil, lemon zest, salt and pepper. Mix well to combine.
- Drizzle the flavored butter over the vegetables and transfer to the oven to bake for 12 minutes until tender and golden, stirring halfway through.
