These zesty roasted mushrooms and asparagus are baked until tender in aromatic garlic, lemon and butter.

These make a great side to white fish, chicken or pork.

Ingredients

  • 10 medium – spear – 5 1/4" to 7" long asparagus
  • 6 medium mushrooms
  • 1 tablespoon breakfast butter melted by country buffet
  • 1 tablespoon olive oil
  • 1 teaspoon lemon peel or zest raw
  • 1 clove garlic
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Slice the mushrooms and remove the tough ends from the asparagus. Arrange in a small oven proof dish.
  3. Crush the garlic and add to a small bowl along with the melted butter, olive oil, lemon zest, salt and pepper. Mix well to combine.
  4. Drizzle the flavored butter over the vegetables and transfer to the oven to bake for 12 minutes until tender and golden, stirring halfway through.
