This side dish of cauliflower rice is heavily seasoned with spices before cooked to a golden brown. The addition of diced peppers adds a bit of sweet peppery flavor to go with this cajun-inspired meal component.

Ingredients

  • ½ tablespoon olive oil
  • 3 ounce red bell peppers, raw
  • 2 cup cauliflower, cooked from fresh
  • ¼ teaspoon salt
  • ¼ teaspoon white pepper, ground
  • ⅛ teaspoon onion powder
  • ½ teaspoon oregano, dried
  • ¼ teaspoon garlic, powder
  • ⅛ teaspoon cayenne
  • ½ teaspoon paprika

Instructions

  1. Heat the olive oil in a pan over medium heat and toss in diced red bell pepper. Continually toss and cook the peppers until the skins become charred – about 4 minutes.
  2. Stir in the cauliflower with all the seasonings. Turn the heat up to a medium-high and continually toss and cook the rice until the excess moisture has evaporated and the rice turns a slightly-charred golden brown.
  3. Serve hot with your favorite keto protein or vegetarian main course.
