This side dish of cauliflower rice is heavily seasoned with spices before cooked to a golden brown. The addition of diced peppers adds a bit of sweet peppery flavor to go with this cajun-inspired meal component.
Ingredients
- ½ tablespoon olive oil
- 3 ounce red bell peppers, raw
- 2 cup cauliflower, cooked from fresh
- ¼ teaspoon salt
- ¼ teaspoon white pepper, ground
- ⅛ teaspoon onion powder
- ½ teaspoon oregano, dried
- ¼ teaspoon garlic, powder
- ⅛ teaspoon cayenne
- ½ teaspoon paprika
Instructions
- Heat the olive oil in a pan over medium heat and toss in diced red bell pepper. Continually toss and cook the peppers until the skins become charred – about 4 minutes.
- Stir in the cauliflower with all the seasonings. Turn the heat up to a medium-high and continually toss and cook the rice until the excess moisture has evaporated and the rice turns a slightly-charred golden brown.
- Serve hot with your favorite keto protein or vegetarian main course.
