This creamy cauliflower cheese dip is rich with cheddar, parmesan, mozzarella, zesty lemon and aromatic garlic.
This is a great dip for keto crackers or spreading on low carb breads.
Ingredients
- 3 tablespoon olive oil
- 1 cup cauliflower florets by flavorite
- 1 clove garlic
- 1 tablespoon sour cream
- 1 teaspoon lemon peel or zest raw
- 1 teaspoon lemon juice
- 1 teaspoon salt, sea salt
- ⅔ cup, grated cheddar cheese
- ½ cup, grated mozzarella cheese
- ⅓ cup, grated parmesan cheese
- ⅛ teaspoon black pepper
Instructions
- Add the cauliflower florets to a small pan of boiling water and simmer for 4-5 minutes until fork tender. Drain completely and set aside to cool and steam dry.
- Add the cauliflower to a food processor along with the garlic, lemon juice and zest, all the cheeses, sour cream, salt and pepper. Blend to combine.
- With the food processor motor still running, slowly drizzle in the olive oil a little at a time until you have a smooth and creamy consistency.
- Optionally scatter with fresh herbs to serve.
