These crispy cauliflower fritters are coated in an Indian spiced batter and fried until crisp and golden.

These are a great sharing snack or starter served with a bowl of cooling yogurt dip or cucumber salsa.

Ingredients

  • 1 2 cups olive oil for frying
  • 1 small – head – 4" diameter cauliflower
  • 1 teaspoon water
  • 1 large raw egg
  • 1 teaspoon lemon juice
  • 1 teaspoon cumin, ground
  • 1 teaspoon ground coriander
  • 1 teaspoon ginger, ground
  • 3 ounce food cupboard home baking almonds ground by sainsbury's
  • ½ teaspoon turmeric, ground
  • ½ teaspoon baking soda
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt, sea salt
  • â…› teaspoon black pepper

Instructions

  1. Dice the cauliflower into small florets and add to a pan of boiling water. Simmer for 3-4 minutes until tender. Drain, pat dry and set aside to cool.
  2. Add the ground almonds, cumin, coriander, ginger, garlic powder, turmeric, lemon juice, baking soda, salt and pepper to a food processor. Pulse to combine.
  3. Add the egg and water and blend to a smooth paste. Transfer to a large mixing bowl.
  4. Add the cooled cauliflower to the mixing bowl and use your hands to mix the cauliflower and batter together.
  5. Heat the oil in a small saucepan over a high heat. Once hot, carefully scoop half the cauliflower and batter mixture into the pan. Cook for 1-2 minutes, turning halfway through until crisp and golden. Transfer with a slotted spoon to paper towels then repeat with the remaining cauliflower.
