These cauliflower skewers are tossed in Parmesan cheese and aromatic chives then wrapped in bacon and baked until crisp and caramelized.
Perfect as a side, snack or even lunch served with a green salad!
Ingredients
- 12 slice – 6" long bacon
- 2 tablespoon, grated parmesan cheese
- 1 small – head – 4" diameter cauliflower
- 1 teaspoon chives, dried or dehydrated
- 1 tablespoon olive oil
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Cover 4 wooden skewers in water to soak.
- Dice the cauliflower into 12 even sized florets. Add to a pan of boiling water and boil for 3 minutes. Drain and immediately submerge in ice cold water to stop the cooking process. Drain and pat dry.
- Preheat the oven to 400 degrees Fahrenheit.
- Add the cauliflower florets to a mixing bowl and sprinkle over the Parmesan, chives, salt and pepper. Drizzle with the olive oil and use your hands to rub the seasonings into the cauliflower.
- Wrap each individual floret in a slice of bacon then add three bacon wrapped florets to each skewer.
- Arrange the skewers across a shallow oven tray and bake for 20-25 minutes until the cauliflower is tender and the bacon is crisp, turning halfway through.
