This quick and easy keto mash uses cauliflower in place of carb heavy potatoes and is rich with butter, mustard and tangy cheddar cheese.

This is a great side dish to pork or chicken dishes, perfect with sausages!

Ingredients

  • 1 ½ teaspoon mustard
  • 1 medium – head – 5" to 6" diameter cauliflower
  • 1 tablespoon unsalted butter
  • 1 clove garlic
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper, ground
  • ½ cup, grated cheddar cheese

Instructions

  1. Dice the cauliflower into florets and add to pan of boiling water. Simmer for 5-6 minutes or until fork tender and softened. Drain and set aside to steam dry.
  2. Return the cauliflower to a low heat and add the butter, salt and pepper, cheese and mustard. Crush the garlic and add to the pan. Mash everything together until smooth and well combined. Serve hot.
