These quick and easy roasted leeks are part cooked until tender then roasted with a little olive oil and a generous helping of oozy cheddar cheese.

These make a great side dish for sharing, perfect served with roasted meats.

Ingredients

  • 1 each leeks
  • 1 tablespoon olive oil
  • ½ cup, grated cheddar cheese
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Remove any outer leaves from the leek and cut away the tough ends. Slice the leek into three equal segments. Add to a pan of boiling water and simmer for 3 minutes until fork tender. Drain completely and set aside to steam dry.
  3. Once cool enough to handle, slice the leek segments in half and arrange in a small oven proof dish. Drizzle with olive oil and season with salt and pepper.
  4. Scatter over the grated cheese and transfer to the oven to bake for 10 minutes until the leeks are soft and the cheese is melted and golden.
